In a Medium Pan Bring Quinoa, 1 1/2 C Water and 1 T Olive Oil to a Boil. Reduce Heat , Cover and Simmer 20 Minutes, Until Quinoa Is Tender and Water Is Absorbed, Set Aside. Meanwhile in a Large Pot Heat 1 T Oil on Medium Hight. Add Onion and Minced Garlic , Cook Until Translucent, About 5 Minutes. Add Chili Power, Cumin, Garlic Powder , Oregano. Stir 1 Minute. Stir in Tomato Sauce, Tomatoes, Sugar, Black Beans, Bell Peppers, Chipotle Pepper and 1 C Water. Bring to a Boil Then Reduce Heat Cover and Simmer 20 Minutes. Stir in Quinoa, Corn and Cheese. Heat Through. Garnish With Sour Cream, Fresh Chopped Cilantro and Jalapenos(chopped If Desired) and Salt to Taste. Serve Warm With Tortilla Chips. |
