Ingredients

Adjust Servings:
1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Oatmeal Orange Muffins

    I didnt have brown sugar so substituted with more white. I added a bit of cinnamon and flax meal to it, too. I topped them with orange zest. used fresh squeezed oranges for the juice. They turned out light and fluffy and were the perfect after school snack with butter and a slice of cheese!

    Oatmeal Orange Muffins, I love the orange flavor of these, different for a muffin Yummy! I got this recipe from an old (1980’s) Canandian cookbook called Muffin Mania I usually double or triple the recipe and freeze the extras (Prep time includes soaking time ), I didnt have brown sugar so substituted with more white I added a bit of cinnamon and flax meal to it, too I topped them with orange zest used fresh squeezed oranges for the juice They turned out light and fluffy and were the perfect after school snack with butter and a slice of cheese!

    Cream Margarine and Sugar.

    Beat in Eggs and Stir in Oat Mixture.
