Old Fashioned Home Fried Potatoes, When we cook bacon in the south, we save the drippings and use it for flavor in other foods This is one of my favorite potato recipes, I always like to try out new recipes, so decided to see how others prepared their fried taters This is the way I make them, excluding the bacon I live in southwest Missouri, which isn’t that far south, but I also save my bacon grease (drippings) in a covered bowl and store in the refrigerator to use later on for frying potatoes, making wilted lettuce, and to add to green beans, spinach, greens, etc I’m sure that it’s not considered healthy cooking, but the smoke flavor of bacon is so yummy!, sounds a lot like the home fries I had at Philly diners back in the 60’s Not like the stuff they call home fries today Having them tonight
