Adjust Servings:
1 (12 ounce) bag iceberg garden salad
1/4 small red onion, sliced paper-thin
6 - 12 pitted black olives
6 mild pepperoncini peppers
1 - 2 small roma tomato, sliced
1/2 cup crouton
italian dressing (or use a recipe for olive garden's house dressing)
freshly grated parmesan cheese, to taste
fresh ground black pepper, to taste

Olive Garden Salad Copycat

    I love this salad. I generally go to a head of iceberg lettuce instead of the bagged, and I tear it instead of chopping, as the edges hold their color better. If I'm also serving guests who don't care for tomatoes, use whole cherry tomatoes. Otherwise, I stick with the Roma tomatoes. Be sure to keep the ingredients as dry as possible before adding the dressing. I shake the moisture from the olives and peppers before tossing them in. This allows the dressing to adhere better. use any good, bagged garlic herb croutons. I either use the Olive Garden brand of bottled dressing OR go to the copycat dressing recipe you can find on line. I serve this with Zupa Tuscana, which uses my modified version of the OG copycat you can also find on line. Great dinner!!

    In a Large Glass or Wooden Salad Serving Bowl, Toss Together the Lettuce Mix, Onion Slices, Olives, Pepperoncini, Tomatoes, and Croutons. Add Dressing and Toss to Combine.
