One-Bowl Chocolate Mayonnaise Cake

    This review is for the cake only, not the frosting. I probably shouldn't review this recipe at all because I made so many changes, but since I'm giving it 5 stars, hope it's okay. The changes were made simply because I had to work with what was on hand. I was out of chocolate chips and vanilla so those weren't used. There was only about 2/3 cup of cocoa and 1/2 cup of low-fat mayonnaise, so that's what used. I added 1/2 cup of 2% plain yogurt to compensate for the missing mayonnaise and also added a spoonful of vinegar. used cold coffee because the batter had to sit awhile waiting for its turn at the oven and I know from previous experience that adding hot liquids too soon can spoil a cake recipe. After baking I topped the cake with a broiled walnut topping. This made a delicious, rich, moist cake that was enjoyed by all. Thanks for the recipe.

    Grease a 13 X 9-Inch Baking Dish.

    For the Cake; Combine the Flour, Both Sugars, Baking Powder, Baking Soda and Salt in a Large Mixing Bowl; Add in the Mayonnaise and Oil, Beat on Medium Speed of an Electric Mixer Until Thoroughly Combined.

    Carefully and Slowly Add in the Hot Brewed Coffee and Vanilla; Beat Until Blended (about 1 Minute).

    Add in the Mini Chocolate Chips; Mix to Combine.

    For the Mocha Frosting; in a Large Bowl Combine the Boiling Water With the Coffee Granules; Stir Until the Granules Completely Dissolve.
