Adjust Servings:
3 tablespoons butter
1/4 cup diced onion
1/4 cup diced celery
3 tablespoons flour
2 cups milk (can add more if it thickens too much)
2 cups shredded cheddar cheese
1/2 cup sour cream
1 cup frozen peas
1 cup frozen corn
1 cup diced cooked potato (can used drained canned diced potatoes)
2 cups diced ham
1/4 teaspoon pepper
1/8 teaspoon cayenne (or to taste)
1/4 teaspoon salt (or can omit since ham and cheese are salty)

Melt Butter in a Large Dutch Oven or Oven Safe Heavy Bottom Pot.

Add Onions and Celery and Saut For 1-2 Minutes Until Softened.

Whisk in Flour and Cook For 1-2 Minutes.

Whisk in Milk a Little at a Time and Cook Until Just Beginning to Boil and Sauce Has Thickened.

Remove from Heat and Add 1 and 1/2 Cup of the Cheese and Stir Until Incorporated.

Stir in Sour Cream.

Add Ham, Potatoes, Corn and Peas.

Cover and Place in 375 F (190 C) Oven For 25 Minutes.

Remove Cover, sprinkle Remaining Cheese on Top and Cook For Additional 5 Minutes.
