Orange Bran Flax Muffins

Features:
    Cuisine:

What an unusual recipe. I was expecting them to taste bitter due to the orange pith and peel but no way! These muffins are great! I made a couple changes to the recipe. I didn't have oat bran so I ground up steel cut oat and substituted frozen blueberries for the raisins. The orange tastes so fresh and sweetness level was just perfect for us. Totally hubby approved! used organic oranges for this recipe. Thanks for sharing. : )
