Orange Bran Flax Muffins,Melt in your mouth muffin. The Prevention reports states that these muffins defeat breast cancer. I tried them and they are good tasting muffins.,What an unusual recipe. I was expecting them to taste bitter due to the orange pith and peel but no way! These muffins are great! I made a couple changes to the recipe. I didn’t have oat bran so I ground up steel cut oat and substituted frozen blueberries for the raisins. The orange tastes so fresh and sweetness level was just perfect for us. Totally hubby approved! used organic oranges for this recipe. Thanks for sharing. : ),Did anyone attempt to swap out buttermilk & eggs to veganize? What did you try?
