Orange Streusel Coffee Cake,This recipe came from my sister. She would make this every Christmas morning, and serve it with Mimosas.,Great cake, wonderful texture with good lift. The only change I made was to increase the orange zest to two big oranges worth. Thinking of replacing 2 tablespoons of the 1/2 cup of OJ with frozen OJ concentrate next time. I like orange 🙂 I’ve made it three times, each time with a different topping. A cinnamon-sugar streusel adding finely chopped walnuts, a regular streusel with finely chopped almonds and drizzled with melted white chocolate, and an orange glaze. All were delicious. Thank you, this one is getting passed on, with full credit of course 🙂 Ps. Best to use a very light hand when mixing. Overmixing makes for a tough cake. use a spatula, folding and cutting, just until moistened.,Followed the original recipe, but substituted oil with melted ghee. It turned out amazing. Light sponge with a rich crust like topping. Before making any alteration to the sponge, I think you should try out the original recipe first.
