Ortega Scramble, This is a recipe that I made up one day inspired by Chile Rellano Its very simple to make and a great way to spice up scrambled eggs I usually make this on the weekends for my family , Wonderful served with salsa! I couldn’t believe how much it resembles Chili Rellano in flavor Surprisingly no one would ever know that there are torn pieces of flour tortillas even in this I would think if you had any leftover it would be good inserted into a fresh tortilla with salsa and served as a breakfast burrito as well Very good! I made this last night I did add one cup diced red sweet pepper with the eggs and green chilies and a 1/4 cup evaporated milk(it makes the mix a little creamier)and salt and pepper To save time, tear the tortillas in bite size pieces before you start to cook, saves time This is a great dish to serve hungry football players!! In a Medium Sized Bowl Add in All the Eggs and the Green Chiles and Whisk Together and Set Aside. |

in a Large Skillet Add Butter Over Medium Heat and When Melted Add in the Egg Mixture and Start Scrambling the Eggs Until Half Way Done. Then Add in the Cheese and Take the Flour Tortillas and Start Tearing Them Up Into Bite Size Pieces and Add to the Mixture and Keep Scrambling Until Egg Is Completely Cooked. |
