And what degree should we get the oil up to and what is the best oil to use? Canola? Vegetable? or doesn’t it matter? Thank you! I cannot wait to try this one I will let you know how it all turns out I am thinking of baking 1/2 the chicken and frying the other 1/2 , I did this your way with the butter melted in the pan, but this step isn’t necessary I normally soak my pieces of chicken in a seasoned buttermilk/egg mixture for several hours and then dredge in seasoned flour, pan fry to sear and then place on a cooking rack over a foil lined baking sheet and bake at 400 until done Comes out like regular pan fried chicken without the mess on the stove top
