1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crushed
1 1/2 cups cooked chicken, chopped
1 cup shredded cheddar cheese
2 green onions, chopped with some tops (about 1/4 cup)
6 (8 inch) flour tortillas
2 tablespoons margarine, melted
shredded cheddar cheese, for serving
chopped green onion, for serving
picante sauce, for serving

    I am from Mesa also and I add roasted red peppers instead of salsa to my chicken, the cumin, onions, oregano and no cheese. use the same for tacos. You can use corn tortillas for tacos and enchiladas just warm the tortillas in the oven with a damp cloth over the top. Also the tortillas can be warmed with a light spray of avocado or canola oil.
