Oven Fried Eggplant (Aubergine),This recipe appeared in “Cooking Light” magazine. This is a non-traditional way to prepare eggplant, but it really cuts the calories.,This will become a regular meal for me! Simple and quick. I didnt have any mayo and dont eat onion so used Garlic Kebab Sauce and then coated in the crumb mix. 12 minutes each side in the oven and then an extra 5 minutes. I think you could use different sauces to get different flavour profiles.,Easy cheap and delicious lunch.
