    Pad Thai With Chicken and Shrimp, PLEASE NOTE: This calls for one 1/2 pound package of noodles. Not one pound. Not a pound and a half. I’m not sure how else to write it so that it’s clearer. I think this is a great Pad Thai recipe – quick and easy. It’s certainly a favourite in our house. I would suggest making a double batch of the sauce, so the dish is even more flavorful. For those with milder tastes, cut back on the red pepper flakes. The recipe as is has quite a bite to it. This isn’t a “authentic” Pad Thai recipe, so if that’s what you are looking for, then this may not be it., It was pretty good, thought it was a bit salty and my husband said that was the fish sauce, so next time we will use less. Tripled the sauce because I like my food saucy and it is less dry when leftovers are reheated. I didn’t have any peanut oil so used sesame oil instead and my pepper flakes looked kinda stale so I put a bit of sriracha in the sauce mix. Turned out great. I am definitely gonna make this again but I will change a few things to fit my personal taste. Less ketchup, more shrimps/less chicken, maybe add a little peanut butter as other reviewers suggested. I can’t wait to have it again for lunch tomorrow!
