Parma Figs, This is a fantastic little starter, the figs look just like little flowers If you can, use brown sugar and wild honey, the give more rustic taste Original recipe is from Conrad Gallagher’s In 3 easy Steps cookbook , These were outstanding! The star of an extended family luncheon with a high tea theme We used procuitto for the parma and used homemade greek yogurt for the stuffing I didn’t think they looked much like flowers but still cute and the flavor was to die for! (I burned the second batch for lack of watchfulness though it was soo disappointing!)

Open the Figs by Scoring Them on the Top and Gently Squeeze from the Bottom So They "open Up". |

Wrap the Ham Around the Open Figs, and Spoon Some Ricotta in to the Openings. |

Sprinkle the Sugar on the Ricotta, and Place Under Hot Grill Until the Figs Are Warm and Cheese Starts to Brown. |
