Parmesan Zucchini,My husband dislikes zucchini, but even he gladly eats his servings of this at dinner!,Awesome, I cut them once more just to make them thinner and everyone loved them…Thanks for the recipe,I thought the flavor of this zucchini was great. Subtle but still had great taste. Would be great with a sprinkling of panko bread crumbs with the parmesan if you’re looking for that crunchy texture!

Clean the Medium (or Large-Ish, If You Like Your Squash as I Do!) Zucchinis Well, Cut the Ends Off, and Slice Them Lengthwise Into Quarters So That You Have Eight Pieces. |

Coat the Bottom of a Baking Dish With the Olive Oil and Place the Zucchini Pieces in the Dish. |
