Adjust Servings:
2 teaspoons fresh lemon zest
1/4 cup lemon juice
1/3 cup extra virgin olive oil
2 large garlic cloves, minced
1/2 cup kalamata olive, sliced (optional)
1 pint cherry tomatoes, halved
3 tablespoons basil, julienned
salt & freshly ground black pepper (to taste)
1 lb fresh linguine
1/4 cup grated parmesan cheese (opitonal)

Pasta With Lemon Olive Oil

    I made this tonight (12/13/18). I'm used to meat sauce or creamy sauce on pasta, so was a little concerned with the broth being so light. I didn't use olives, nor garlic. I also added a large piece of chicken cooked on the stove in olive oil and chopped it up. I'm not one to measure things and I didn't this time either. Added a little more of this and a little more of that. A little extra seasoning, too. My husband and I both thought this was really good. And it was so easy to put together. Will be making this often now.
