Paul Prudhommes Cajun Meat Loaf

I was hopeful about this recipe after having read the reviews, but while it was good, it's not something i would make again as written. My biggest complaint about the meal was that there was far too much catsup in the meatloaf for my tastes. My husband didn't initially taste the catsup until I pointed it out, but since I'm not a catsup lover in the first place it was over powering. Also I would have pulled back on spices a bit, but again, the husband thought it was seasoned well. With tweaking, I could see this becoming part of our regular rotation. I would have rate this a 3. The husband would have rated it a 5. So I gave it a 4.

Paul Prudhomme’s Cajun Meat Loaf, I’ve never been a fan of meat loaf After all, its a loaf of meat with ketchup on it or so I thought My friend made this for me last night and it was so good! The recipe is from Paul Prudhomme (of K-Paul’s, New Orleans) Warning: this is very spicy and if you’re not used to eating cajun type foods, you might want to back off on the cayenne & hot sauce just a bit , I was hopeful about this recipe after having read the reviews, but while it was good, it’s not something i would make again as written My biggest complaint about the meal was that there was far too much catsup in the meatloaf for my tastes My husband didn’t initially taste the catsup until I pointed it out, but since I’m not a catsup lover in the first place it was over powering Also I would have pulled back on spices a bit, but again, the husband thought it was seasoned well With tweaking, I could see this becoming part of our regular rotation I would have rate this a 3 The husband would have rated it a 5 So I gave it a 4 , I have been using this recipe for over 20 years I like a lot of the reviewers hated meatloaf until I found this recipe ( it’s amazing that all the other cajun meatloaf recipes that came up were almost the SAME recipe) Whenever I make it I at least double it- it’s great to have at least one in the freezer!! The added sauce is very good, but be warned- it is spicy
