    I make banana bread a lot, and we love it, but sometimes youjust need a change. I specifically will pick up the older bananas for my baking and save the money (when they are marked down). Also, this is a great way to use the peanut butter that I got a great deal on and bought a LOT of. Light and fluffy. I liked that there was no butter, even though I have nothing against butter. I might change it up with some choc chips or something and less sugar next time. used whole wheat flour (as always).

Lots of tastes like banana bread in a cookie;) These were simple and fast did well on aluminium foil with a bit of oil/spread to lightly grease I opted to cut the brown sugar down Modified the 1/2 cup brown sugar to: 1/4 cup brown sugar, 1/4 cup butter flavored maple syrup Also added a dash of vanilla and salt We only had creamy pb in the cabinet, made for smooth, chewy, lightly sweet cookies They came out perfect at 13/14 minutes @350 used heaping tablespoons dropped onto greased foil pans SO SIMPLE AND FAST!!! YUM?? **IMO, would serve great as scratch ice cream sandwich cookies??

    Preheat Oven to 350f

    Spray Baking Sheet With Non-Stick Cooking Spray.

    in a Large Bowl, Combine Egg, Peanut Butter, Banana, and Sugars.

    Mix With an Electric Mixer Until Smooth.

    Add Flour, Baking Soda, and Baking Powder and Continue to Mix Until Well Blended.

    With a Small Spoon, Scoop Out Batter and Place on Baking Sheet Aproximately 2 Inches Apart and Bake For 10 to 14 Minutes Until Lightly Brown.

    Remove and Transfer Cookies to a Wire Cooling Rack.
