NOTHING worked until I was told this way to cook them and it really, really works After cleaning your beans, bring the amount of water needed to a boil. Now add beans and 3 medium sized cleaned potatoes to the beans plus the rest of what you are adding. Bring the water back to a boil turn down heat and simmer ONLY until done. This will depend on how big a pot of beans you are making. NEVER, never add salt until the beans are done as this makes the skin get tough. This is a proven way to clean out the acid from a very scrumptious dish. Boiling them does not let the acid be removed. Enjoy
