Directions
Pork ‘comfort’ Leftover Roast, I made a Cuban garlic roast and had a lot of leftovers, it was cold and dark outside and I wanted something hot and comforting, I had enough of a tenderloin leftover to feed all five of us 1.3 lb and whipped this up. It was so tasty! I didn’t have several ingredients. No celery, but I had celery flakes. No stewed tomatoes or bell pepper, but I had rotel and salsa. And no consomme, but I keep Better Than Bullion, and added about 1 1/2 T in 10 ounces of water. Oh, ha, and no caraway seed, so used dill. But you know, it’s April of 2020, and COVID shelter in place is happening, so we do our best! Anyway, it was really lovely, everyone enjoyed it, my 13 yo son especially, who kept asking for more off everyone else’s plate! Next time, I might use the immersion blender to hide the veggies from my 10 yo daughter a bit better. So good though!, I had cooked a 5 lb Center Cut Loin Roast in the crockpot, and part in the oven to do several meals with, some pulled for BBQ, cuban sandwiches, or just sliced thin for dinner. I did some different seasonings, Bay leaf and garlic powder. I didnt use the bullion because used my own homemade bone broth. I didn’t use caraway or celery salt. The Hubby liked it, he said try it with othet leftover meats.

Melt Butter in Large Sauce Pan, Add Celery Onion, Garlic and Bell Pepper Saute Until Just Tender Crisp, or Until Your Liking Stir in Flour. Add Beef Consomme, Beef Bouillon and Stewed Tomato's, Worcestershire Sauce , Caraway Seed and Cook 30 Minutes Adding More Liquid as Needed, 10 Minutes Before Serving Add Pork, Black Pepper and Celery Salt as Needed, Stir in Sour Cream Heat and Serve Over Buttered Egg Noodles. |
