Pork is tender & lime juice adds a twist of flavor. used ElPaso fajita seasonings and mini sweet peppers instead. Chopping could be done the night before and dinner would be ready in minutes the next day, but same day prep is quick also., This is so easy and so good. We had leftover pork tenderloin and simply used that. Because my pork was already cooked, I cooked the vegetables first and added the pork at the end to warm it. used a full packet of store bought fajita mix and it was perfect.
