Chopping could be done the night before and dinner would be ready in minutes the next day, but same day prep is quick also., This is so easy and so good. We had leftover pork tenderloin and simply used that. Because my pork was already cooked, I cooked the vegetables first and added the pork at the end to warm it. used a full packet of store bought fajita mix and it was perfect.

    Heat the Oil in a Large Skillet Over High Heat.

    Add Pork, Sprinkle With the Salt and Pepper.

    Cook, and Stir Constantly For 2 Minutes.

    Add Peppers, Onion, Garlic, Cumin and Fajita Seasoning, Continue to Cook Until the Vegetables Are Crips-Tender, About 3-4 Minutes.
