Pork Tenderloin With Balsamic- Cranberry Sauce

    I simmered fresh cranberries with coconut sugar and a bit of salt. Added some citric acid then balsamic. The balsamic vinegar totally makes this sauce work! I omitted the onion but served some caramelized onion on the side...not everyone loves onion around here. Served as a condiment with roasted chicken and warm Camembert. Really good with the cheese!

    Melt 1/2 Tablespoon Butter in Heavy Large Ovenproof Skillet Over Medium-High Heat.

    Roast Pork Until Thermometer Inserted Into Center Registers 155f, About 10 Minutes.

    Meanwhile, Melt Remaining 1 Tablespoon Butter in Heavy Medium Skillet Over Medium-High Heat.

    Add Onion and Rosemary; Saut Until Onion Softens, About 3 Minutes.
