1/4 cup olive oil
1/2 lb fresh mushrooms, sliced
1 medium onion, sliced and separated into rings
2 cups hot cooked rice

Pork Tenderloin With Gravy

    I was unsure of trying this because I was afraid it would dry out the pork but it didn't. The gravy thickened much quicker than I expected so I added more water, perhaps another cup. used red wine vinegar and no mushrooms. The pork was tender and juicy and the gravy was very good. I thinned it too much this time but will be more careful next time. Very nice recipe and so quick.
