Portuguese Hard-Boiled Eggs Ovos

    This was an interesting change for breakfast. The tomato goes really well with the egg and spices. used a cold egg, but it would have been much better with a warm one. I just couldn't toss the pulp out, so I set it aside, and then warmed it in the skillet with the spices to spoon over the top instead of using canned tomato sauce. For ZWT8 om-nom-nommers :-)

    Cut the Tomatoes Crosswise in Half and Remove the Pulp.

    Season Lightly With Salt and Pepper, and Cook in Hot Oil For a Few Minutes.

    Place a Freshly Shelled Egg in Each Tomato Half and Pour Over Them a Little Thick Tomato Sauce or Puree.
