2 garlic cloves, minced
1 - 2 large tomatoes, peeled, chopped and seeded can also used canned
2 cups chicken broth or 2 cups beef broth
1 cup long-grain rice

    In love with this recipe. Had some leftover grape tomatoes I wanted to use, so went looking for an easy recipe with simple ingredients & surprised with how tasty this turned out. Completely addicted! used grape tomatoes & a can of diced tomatoes & jasmine rice & it couldn't have turned out better. Highly recommend!

    Portuguese Tomato Rice, This is from This dish is made in Portugal., In love with this recipe. Had some leftover grape tomatoes I wanted to use, so went looking for an easy recipe with simple ingredients & surprised with how tasty this turned out. Completely addicted! used grape tomatoes & a can of diced tomatoes & jasmine rice & it couldn’t have turned out better. Highly recommend!, Great taste, everyone loved it. I added some frozen peas when adding the rice. Better half is from Portugal and said it was just like his mothers!

    Heat Olive Oil and Butter in Saucepan Until Butter Is Melted.

    Add Onion and Garlic and Saut Until Onion Is Soft.

    Add Chopped Tomatoes, Cover and Simmer For 15 Minutes.

    Add Broth and Bring to a Boil, Then Add Rice, Cover and Simmer For About 20 Minutes.

    Salt and Pepper to Taste.
