5 carrots, 1 in chunks
5 potatoes, 2 in chunks
1 1/2 cups sliced celery
1 teaspoon salt

Pot Roast Perfection

    When my family saw that I was making a roast, nobody was thrilled. However, once served, EVERYONE came back for seconds and thirds!! I have been given the "family approval" to make this again. HaHa. I took the suggestion of another reviewer and made a beef barley soup with the leftovers wasn't much, and the flavor of this roast really pulled through in the soup too!
    The ONLY thing I did differently from the recipe was I sauted the onion and celery with 2 cloves finely chopped garlic.

    In Dutch Oven, Brown Roast in Oil.

    Add Onions and Saute Briefly.

    Add Broth; Cover and Cook on Low For 2 Hours;, Add More Broth If Necessary.

    Add All Other Ingredients.

    Bring to a Boil.

    Reduce Heat to Low and Cook For 1-1/2 Hours More.
