4 tablespoons dark brown sugar
2 medium scallions, minced
4 teaspoons minced garlic cloves
2 tablespoons toasted sesame oil
2 teaspoons hot red pepper flakes

Pot Sticker Dipping Sauce

      I have a problem with this recipe. Like many of us, I have eaten countless gyoza, but at no time did I ever experience a dipping sauce that physically burned my lips when I sampled it. The red pepper flakes are OVERKILL. When you brown them in the oil, the heat is infused within it. Then, all that spicy oil floats on top of the sauce. Also, according to Gordon Ramsey, you never fry in sesame oil. Its purely an aromatic and used to add flavor to finished dishes. I found that the finished sauce was highly acidic and has zero umami. Because used all my soy sauce on the recipe, and had no time to go to the store, only option to fix the sauce was to strain out the bits, add more garlic and scallions, and then add some beef broth to it for savory-ness. I boiled it for a bit to try and mellow the vinegar. It was ok. Now I know.

      1. in a Saucepan, Heat 2 Tablespoons of Toasted Sesame Oil to Medium-High Heat. Add Scallion, Garlic and Red Pepper Flakes. Lower Heat to Medium and Continue Stirring About 3 5 Minutes or Until Garlic Starts Browning.

      2. increase Heat to High and Stir in Soy Sauce, Vinegar and Water and Bring to a Boil.

      3. add Dark Brown Sugar and Stir Until Sugar Is Dissolved.

      4. lower Heat to Low and Cook For 10 Minutes, Stirring Often.

      5. makes About 3 Cups. (sauce Can Be Refrigerated in Air-Tight Container For Several Days).
