Potato And Green Bean Salad With Balsamic

Features:
    Cuisine:

I loved this mixture of flavors. use my Cook's Illustrated potato trick whenever I make potato salad. Cut the potatoes in 3/4 inch cubes, cover with water and add 1 tblsp of salt after they start to boil. Simmer of med heat for 8 minutes. Drain and don't bother rinsing. Then used 1/4 tsp pepper and 1/2 tsp salt in the vinaigrette. I steamed the green beans for 18 minutes... will probably try 15 minutes next time. This is best if you let the flavors blend for a couple of hours. It was also still yummy the second day.
