Potato Curry for 1,Many times when you are alone at home it seems too much bother to cook just for one. Mostly it comes down to just grabbing something, munching away in front of the telly, not even noticing what you are eating. (talking out of experience….)Try this curry, I usually eat it with a salad. The recipe can be doubled, tripled and so on.,I’ve been saving this for today as DH is out of town. It took about 25 mins and is the ideal size for one. The flavors came together beautifully and with a small green salad dressed only with lemon juice and a light sprinkle of salt I had a grand lunch without needing to put leftovers away. gotta love that! 😀 Thanks for sharing this.,This was really great and just the right amount for me. I had cooked the potato for about 2 minutes in the microwave first then continued with the recipe. I had used greek yogurt because I prefer the taste of it and it is so much thicker. Will definitely be making this recipe again. I hope next time I dont remember to take the picture only after I eat it. Thanks for sharing Chef Dudo. Made for Indian tag March’09Update: I remembered to take a pic this time before it was all gone. Made it to go with some Butter Chicken and some Naan bread… Added in some peas which I like in these kinds of dishes. Good Stuff…..
