1 (6 ounce) package chicken, stuffing-mix
1 1/2 cups water
1/4 cup butter or 1/4 cup margarine
2 eggs
1 cup chopped spinach (fresh or frozen)
1 (4 ounce) package of crumbled goat cheese
4 slices bacon
8 ounces fresh mushrooms, cleaned and chopped
1 (8 ounce) package cream cheese
1 (16 ounce) jar prepared alfredo sauce

    Heat Oven to 375 Degrees.

    Open Package of Simply Potaoes Traditional Mashed Potaoes and Place Potatoes in Large Mixing Bowl.

    Place Water and Butter in Sauce Pan. on Top of Stove, Bring Water and Butter to Boil. When Butter Is Melted, Stir in Crumb Mixture and Remove Pan from Heat. Stir to Make Sure All Crumbs Are Moistened and Then Let Rest a Couple of Minutes.

    in a Small Bowl, Beat Eggs Until Smooth.

    Add Eggs and Stuffing to Potatoes in the Large Mixing Bowl and Stir Until Well Mixed.

    If Chopped Frozen Spinach Is Used, Thaw Spinach and Pat Dry With Paper Towel. If Fresh Spinach Is Used, Wash Leaves and Then Pat Dry With Paper Towel Before Chopping Into Fine Pieces.

    Add Spinach to Potato-Dressing-Egg Mixture.

    Makes Sure Goat Cheese Is Well Crumbled Then Add It to Dressing-Potato-Spinach Mixture and Stir Until All Ingredients Are Well Blended. Allow to Rest 5 Minutes.

    If Serving as an Entree, Using Hands Shape Potato Mixture Into 18 Balls (3 Per Serving) and Place on Cookie Sheet. Bake For 30 Minutes or Until Golden Brown and Set.
