2 cups water
2 (1 ounce) envelopes lipton dry onion soup mix (use the onion mushroom flavor)
1 cup diced onion
1 cup diced celery
8 white button mushrooms, grated

Potato Lunch Casserole

    I can't remember where this came from but it is so easy and it makes a nice meal. We have eaten it for supper with sliced tomatoes and cottage cheese.We like to eat the cottage spooned on top of the tomatoe slices. The kids seem to like this too. I have made it when our son gets company on the weekend or when they show up with him from school. Growing teen boys seem to eat anything that isn't nailed down...lol.

    Arrange Potatoes in Greased 9x13 Pna.

    Sprinkle the Mushrooms, Onions and Celery Over the Top of the Potatoes Evenly.

    Set Aside.

    Combine Margarine, Water, Dry Soup Mix and Bring to Boil.

    Cover Tightly With Foil and Bake at 350 For One Hour or Until Potatoes Are Tender.
