This is almost exactly as I remember it served in Thailand, using lime juice and cilantro on top, instead of the green onion It was served with extra lime wedges and little bowls of chili flakes, chopped peanuts, fish sauce and sugar, on the side Unforgettable!, This was relatively easy to prepare and we just loved the flavors bursting out of this dish We will have often!

Place the Rice Stick Noodles in a Bowl and Cover With Boiling Water. |

Allow to Soak Till Soft. |

Drain and Rinse With Cold Water. |

Heat 1 Tablepsoon of the Oil in a Wok Over High Heat. |

Add the Eggs, Swirl, Stir Gently and Cook Until Just Set. |
