Prawns in a Dark Sauce,This is a great tomato-based Indian dish from one of Madhur Jaffrey’s books. Serve with rice and steamed vegetables or fried potatoes.,I have used this recipe since someone bought me Madhur Jaffrey’s book in 1978. This is one of our favourites along with Lemony Chicken with Fresh Coriander. My daughter who was born in 78 still asks for these 2 meals quite regularly when she visits. Both very authentic tasting recipes.

Blend the Onions, Garlic, Ginger and 3 Tablespoons Water in an Electric Blender Until You Have a Paste. |

Put the Oil in a Wide Pan and Set Over Medium High Heat. |

When Hot, Put in the Cinnamon, Cardamom and Bay Leaves. |
