Pumpkin Chocolate Chip Muffins,Everyone I have ever served these to rants about them. I have made some modifications to make them a little healthier. That recipe is Recipe #2509. Either way though, we love them. (Recipe updated to add vanilla, more cinnamon and reduce oil slightly (original calls for 1 1/2 cups oil) since we prefer them with these alterations.),Family loves these! Made a half recipe with homemade butternut squash puree instead of canned pumpkin. Also subbed half the oil with homemade sugarless applesauce and used olive oil instead of vegetable oil. Used mini chocolate chips. Got 18 muffins. Baked them for 18 minutes, but I think 16 minutes would have been fine. Cooled the muffins in the tins for 10 minutes, then turned them out to a cooling rack.,I got 36 muffins. Baked for 17-18 minutes. This is very good.
