Pumpkin Fritters / Pampoen Koekies, This is a South African recipe (from Magdaleen van Wyk’s The Complete South African Cookbook), something my mom used to make Pumpkins abound at the moment, so I thought I’d share it with everyone They are really delicious Let me know what you think!, This didn’t do much for my husband or myself, I’m sorry to say I ate a couple fritters, he took one bite and left it They were very pretty and easy to make, but I doubt I’ll try them again , I changed this to U S rather than metric So some changes were made used 1 can of pumpkin (15 oz), 1/3 c flour, 2 tsp baking powder, and 1/4 tsp salt Omitted the lemon slices, and did sprinkle with cinnamon sugar Honestly though, my DS’s didn’t like this, but that didn’t come as a surprise seeing that they don’t care for pumpkin pie My DH and I thought this was delicious I served this with recipe#232767 and recipe#173004
