    I've made these for many years. The best pancake recipe! One tip to make the pancakes light and fluffy - separate the egg. Mix the yolk in with the dry and other ingredients. Beat the egg white till fluffy (like for meringue) and fold into the beaten mixture. Don't overmix - leave some of the egg white visible.

    Pour Batter Onto Preheated Griddle, Using 1/4 Cup Batter For Each Pancake. Turn When Bubbles Break on Sufrace.
