For the Dim Sum fans out there, this is a sort of Afghanistan Sticky Rice – it’s exactly the same, only way different. ;),Tried it for dinner tonight. My only change was using left over chicken (wanted to use it up). Very tasty! Quite a few steps but definitely worth the effort. Will have it again for sure.,This is similar to the recipe my mother has been using for years. used chicken with the bone still on because it adds more flavor. I also used a pressure cooker instead of a skillet as it really tenderizes the meat and makes the juice more flavorful. Also, I didn’t mix everything. Traditionally, the meat is placed under the rice, and the rice piled over in a mound, then the carrots and raisins placed on top. I also used slivered almonds with the raisins and carrots which my brother absolutely loves.

    In Large Skillet, Brown Onion in 2 Tbsp Oil.

    Add Chicken and Brown Lightly.

    Add 2 Cups Water, Salt, Cinnamon, Cumin and Cardamom.

    Cover and Simmer Until Meat Is Tender, About One Hour.

    Remove Chicken and Set Aside.

    Saute Carrots and Brown Sugar in 4 Tbsp Oil Until Lightly Browned.
