1/2 - 1 cup heavy cream, depending on thickness of dip you like

Queso Blanco Dip

    Great base recipe! I have Celiac so I can't go to any Mexican restaurants around me so I'm so glad to be able to finally make the queso at home. I've been making it for just myself (my boyfriend doesn't like queso, crazy right?!) so I quartered the recipe but it was still a lot for just me. I read the comments and added a pinch of cumin and chicken bouillon. My local taco shop serves their queso with a spoonful of quac and their hot sauce on top, so I replicated it with a spoonful of Herdez medium quacamole salsa in the center which added some heat. The second time I made it (pictured) I realized while melting the cheese that my cream had gone bad so used a splash of 2% milk and it worked just as well, I can't tell the difference. I also didn't have the salsa so I added a dash of chipotle powder. used boar's head cheese (gluten free and on sale!) and it worked perfectly. Next time I'm going to try it with homemade chips!
