    Quick Cream of Potato Soup, Warm up on those chilly winter days! This makes great leftovers., This is awesome soup! The only thing I did different was to add the flour to the butter/onion mixture after the onions were soft. Then, I slowly added my homemade chicken broth to the roux. used whole milk in this soup. I love the thyme and the celery seed, and I would not omit it.

    In Large Saucepan, Cook Onions in Butter Until Soft.

    Add Potatoes, Chicken Broth, Parsley, Thyme, Celery Seed, Salt, and Pepper to Saucepan.

    Simmer For 15 Minutes.

    Add Milk to Saucepan.

    Puree Half of Soup and Flour in Blender.

    Return to Saucepan.

    Heat Through.
