Quick Dinner Using Leftover Pork Tenderloin, I’m always looking for ways to use up leftovers. I came up with this one last night, and it was delicious served over wild rice. I would rather have used a can of tomatoes, but hubby won’t eat a cooked tomato that he can actually see…oh well!, It was very good, next time I’ll add more hot sauce. Didn’t have tomato sauce so I added a 7.2 of can of Mexican salsa then added few tablespoons of tomato paste. Hubby had seconds. Next time I’ll have tomato sauce or even try the barbeque as others have talked about.
