Quick (Microwave) and Nutritious Steel Cut Oatmeal,This is from McCanns website. I love that you can use the microwave and not have to worry about scorching your pot on the stovetop. Of course, you can always use a double boiler, but that can take a while. I always enjoy steel cut oats because they are more nutritious than rolled oats and have a nice, nutty texture. Note: Cooking times may have to be adjusted for your microwave oven wattage. I have 1000 watts and had to cook 5 minutes covered and 11 minutes uncovered.,I had to modify this recipe slightly, but it mostly worked for me. I make this ahead of time because I have not yet perfected just-in-time steel cut oats in the microwave. Placed 1/2 cup steel cut oats and 1 3/4 cups of water in a 5-qt. covered bowl, 5 minutes covered, then 5 minutes uncovered in a 1000 watt microwave. Removed from the microwave and covered until cool. The excess water was absorbed by the oats by the time it cooled. I refrigerate it and prefer to eat oatmeal cool. used to microwave the above quantities for 10 minutes covered but always got spillover.,Better yet; make 4 servings on the stove top, following directions on carton, put the cooked batch in the fridge. Spoon out a serving when your ready to serve and microwave to warm it up then serve. Cooking time 25-30 minutes, divided by 4 servings = 7 minutes per serving. Duh!
