Directions
Quinoa Black Bean Salad, This is really easy to make. There were no leftovers! What a great combination of flavors and textures. Serve with tortilla chips on the side., This tasted great! The dressing is so easy & a little spicy, it would be great on other salads too. Only change I made: used a microwaveable package of quinoa/ brown rice blend also doubled the recipe so wed have leftovers ??, can this be frozen in single serving portions?

Cook the Quinoa in the Water. Allow to Cool Slightly. |

in a Large Bowl, Combine the Oil, Lime Juice, Cumin, Coriander, Cilantro and Scallions. |

Stir in the Beans, Tomatoes, Bell Peppers and Chilies. |
