Quinoa Salad,I got this recipe from my dear friend Jackie, and have been absolutely hooked on it since!,Just had this at a work potluck and it got rave reviews from a group of over 30 people. The blend of foods was unexpected and I almost skipped it, but glad I didn’t. Never been a quinoa fan. So that in and of itself makes it amazing. Will definitely make it as a go-to staple.,This is the second time I’ve made this salad at the request of my husband and actually the whole family like it. I left out 2 items, only because I don’t care for them personally, the dill and the green onion, but I don’t think it deterred from the taste. Will make this again.

Rinse Quinoa in Cold Water; Drain Well. |

Combine Quinoa With Water in a Medium-Sized Saucepan, Bring to a Boil, Then Reduce Heat to a Simmer and Cover With a Tight-Fitting Lid. |

Cook For 15 Minutes or Until All Water Is Absorbed. (or, You May Cook in Rice Cooker. Use Same Proportions as Above.). |

Remove Quinoa from Heat and Let Stand, Covered, For 10 Minutes. Remove Lid, Fluff With Fork, and Cool Quinoa to Room Temperature. |

Combine Cooked Quinoa With the Rest of Ingredients, Toss Well, and Enjoy! |
