Raw Asparagus Pesto

    I have recently discovered the joy of raw asparagus fresh from the garden. It is a revelation, and this recipe builds on that. I had already peeled the bottoms of the batch and wasn't willing to discard the tough undesirable ends after all that work. So this recipe is a win-win. I loosely followed the recipe, as is my wont, and added salt, white pepper, lemon juice, and a good handful of sliced almonds. Well, no one could identify what luscious sauce had been generously drizzled over the lightly steamed asparagus on their plates. It kept them guessing and chattering. What a great recipe!     Raw Asparagus Pesto,After learning how good asparagus is for the body and how well it helps the kidneys. I thought this recipe was an excellent one. It is not cooked so the the asparagus is full of Vitamin A, Folic Acid. Did you know that asparagus has the largest percentage of RDA of folic acid then any other food source!! So eat up.
