Rhubarb Oatmeal Bars,A delicious rhubarb bar, great for the first rhubarb of the season, or to use up the last. I have found that cooking the rhubarb in half water half fruit juice (I’ve used orange or pineapple) enhances the flavour nicely.,In my crust mixture I added coconut. It was delicious. This is a great recipe. Love it!,I made these bars to take to a family dinner. Everyone loved them! I made the following changes. used butter instead of shortening. used 4 cups of rhubarb for the filling and 1 cup of sugar. They came out just right to suit our desired level of sweet/tartness. Definitely let them cool if at all possible. They are tasty served with ice cream or whipped cream.
