Roast Chicken Masala,Simple mild dry chicken curry. Instructions seem long, but really simple to prepare. From the cookbook “Asian Cook” by Terry Tan,While the chicken was cooking, the spice paste burned and turned black… while the chicken itself ended up undercooked. This is a bizarre way to cook chicken.,Certainly very simple to prepare as KM says, and really tasty too. We used skin off lovely legs (that means no skin and the knuckle trimmed off), and it seemed to work fine. I don’t quite understand why KM stipulated skin on, but don’t worry if, like us, you dont’ like the skin it will work just fine. We love curry and will make this recipe often I’m sure as it’s one of the best chicken curry recipes we have made and eaten in ages.

Clean Chicken Thighs, Removing Excess Fat. |

Rub With Salt and Turmeric Powder and Set Aside. |

Heat Oil in Wok and Add Curry Leaves, Cumin and Fennel Seeds and Fry Till Brown, Shaking the Pan Vigorously to Prevent Burning. |
