Roast Pork Loin and Potatoes,This is the ultimate Italian pork roast. Covering it the first 2 hours of baking is the secret. The recipe comes from Bon Appetit.,This was probably the moistest, most delicious pork roast I have ever had. I put the olive oil, garlic, and herbs on more than 24 rs in advance, and the flavors were amazing.,So incredibly good! My Italian-born husband loved it. I pretty much followed the recipe fully, (letting it rest overnight after slathering it with garlic, herbs and olive oil). I did boil my potatoes and then just tossed them and sauteed a bit in the leftover juices before serving everything with salad and peas. Served with a pinot noir. Will *definitely* do this one again!
