Roasted Beet Hummus

    Nice, healthy recipe. used beets from my garden that I had cooked in my pressure cooker. I think the oven roasted method would add another dimension of flavor. I took a cue from another recipe to drizzle some fresh, homemade pesto over the top. It was a nice complement both in flavor and in color presentation.

    Wrap Beets in Foil and Roast Them at 425 Degree F. For One Hour or Until Soft.

    Place All Ingredients in a Food Processor or Blender and Process Until Smooth. You May Need to Add a Little Water If the Mixture Is Too Thick.
