Roasted Chicken Breast,I heard on the Food Network station that roasting left the chicken with more flavor then boiling or cooking in the crockpot. So I thought I’d try it but found no roasting recipes here. So this one came form Cook.com,This is a good method for chicken on bones with skin – which I personally think is the best. It was a simple and quick preparation. The chicken was nice and moist and thoroughly cooked per my instant read thermometer. For my taste, the chicken flavor in this recipe was bland, but then I usually like stronger tastes. Next time use this method I will probably use a stronger herbed butter mix instead (perhaps some fresh chopped thyme, rosemary, a squeeze of fresh lemon juice and some salt and pepper) and baked on top of fresh sliced shallots.,Good flavour and the skin crisped up nicely.
